Η παρούσα μελέτη αναλύει την διείσδυση και την επίδραση των εργαλείων Διαχείρισης της Ποιότητας στη βιομηχανία τροφίμων, με την ανάλυση των αποτελεσμάτων της πρωτογενούς έρευνας που διενεργήθηκε για τις ανάγκες της παρούσης εργασίας.
Μελετάται ο αντίκτυπος της εφαρμογής των συστημάτων ποιότητας στις Ελληνικές βιομηχανίες τροφίμων και αναλύεται η συσχέτιση των συστημάτων ποιότητας, όπως τοISO 22000 και τοISO 9001 σε συνδυασμό με το HACCP,με τις επιδόσεις των επιχειρήσεων του κλάδου διαχρονικά.
Τα στάδια της έρευνα που διενεργήθηκε έχουν ως εξής:
Αρχικά, συγκεντρώθηκαν πληροφοριών μέσω μιας βιβλιογραφικής ανασκόπησης σχετικά με τη Διαχείριση της Ποιότητας και ειδικά το ISO 22000 και το ISO 9001 σε συνδυασμό με το HACCP και τα προβλήματα που αυτά καλούνται να αντιμετωπίσουν στη βιομηχανία τροφίμων. Δεύτερον, έγινε συλλογή δεδομένων από τη βιομηχανία τροφίμων. Τα δεδομένα συγκεντρώθηκαν από έρευνα μέσω ερωτηματολογίων και συνεντεύξεων σε επαρκή αριθμό από Ελληνικές επιχειρήσεις κρασιού και ελαιόλαδου. Τέλος, έγινε διαχρονική σύγκριση των διαθέσιμων στοιχείων πριν και μετά την εφαρμογή των συστημάτων ποιότητας.

Στο δεύτερο κεφάλαιο διερευνώνται τα προβλήματα του κλάδου των τροφίμων και ο ρόλος των Προτύπων Ασφαλείας. Στο τρίτο κεφάλαιο παρουσιάζονται τα κύρια Πρότυπα Ασφαλείας που εμφανίζονται στην Ελλάδα στον κλάδο των τροφίμων και γίνεται σύγκριση αυτών. Στο τέταρτο κεφάλαιο παρουσιάζεται η κατάσταση των επιχειρήσεων κρασιού και ελαιολάδου στην Ελλάδα. Στο πέμπτο ο τρόπος διεξαγωγής της έρευνας. Στο έκτο τα επεξεργασμένα αποτελέσματα και στο έβδομο κεφάλαιο τα συμπεράσματα.
This study analyzes the impact of the adoption of the Quality Management tools used in the food industry and the results they bring, analyzed from the data gathered from the analysis of the primary research that have been conducted for the needs of this dissertation. It will present the results of the investigation on the impact of the quality systems implementation, such as ISO 22000 and ISO 9001 combined with HACCP, on local food industries by analyzing the correlation between the quality systems and the industries performance diachronically.
The study will be conducted in the following phases: First the gathering of information, through a literature review, about Quality Management and especially ISO 22000 and ISO 9001 combined with HACCP and the food industry problems that they address. Second the gathering of data from the food industry. The data will be gathered through questionnaires and personal interviews to a sufficient number of Greek wine and olive oil companies. In the third phase the temporal comparison of the available data before and after the implementation of quality systems.
The purpose and the importance of this study is to gather knowledge on Quality Management, namely, to measure the infiltration of quality systems in the Greek food industry, compare the benefits with the implementation costs, determine the opportunities given by the implementation, and discover if the given tools are being used in order to improve the capabilities of adopters and their market position.
As for the structure of the chapters, after the introduction, in the second chapter are researched the problems of the Food Industry and the role of the Quality Management Systems. The third chapter presents the main Quality Management Systems that appear in Greece and compares them with each other. The fourth chapter presents the current situation in Greece for Wine and Olive Oil companies. In the fifth chapter the methodology of the research and the data collection procedure are presented.
And final the sixth chapter presents the results of the processed data while the seventh and last chapter presents the conclusion.
