Hotel businesses have some environmental effects just like any business producing goods or rendering services of any kind. Of course, the nature and the size of these effects may not be comparable with those of industrial businesses, but the fact remains that a hotel business consumes energy and other natural resources, and creates waste. Additionally, hotel activities are closely related to the environment so that the preservation of the environment and of the sustainable development is a condition for the existence and the continuation of this kind of activity. The continuous effort of our country to incorporate the principles of sustainability in its strategy regarding the development of the tourism sector, as well as the effort to protect the environment as a valuable resource for tourism is a part of the EU policy. The application of the regulations and measures in force and the promotion of new legislative and financing tools are strongly related to the protection of the environment. Given the special relation that exists between environment and tourism, and given also the development of new types of selective tourism, where the quality of services and the environmental conditions play a great role, hotel businesses have recently undertaken an effort to systematically approach the environment related issues, as they are trying to upgrade hotel services. The Environmental Management Systems (EMS), already known in the industrial sector, are the basis of this approach. These initiatives are voluntary and they are expected to strengthen thanks to the 3rd Framework Programme. Nowadays, the established EMS, apart from some national standards, are the EU Regulation 1836/93 EMAS and the International Standard ISO 14001. Many hotel businesses have started to apply some systems of quality assurance concerning the environment management, in compliance with the national standard ISO 14001. The present thesis studies the International Standard ISO 14001 that has been applied in Europe and all over the world, and especially the conditions of its application in hotel units. This work consists of five chapters, which include the following: 9 Chapter 1: Presentation of the evolution, the special characteristics, the principles and the laws concerning the environmental policy; environmental measures in the EU and in Greece; universal environmental issues; tourism businesses and environment. 9 Chapter 2: The Environmental Management Systems and the evolution of the standards of environmental management; the 14001 standard and its requirements; comparison between ISO 14001 and EMAS. 9 Chapter 3: Detailed description of the hotels’ evolution; forms, differences, types and organization of hotels. 9 Chapter 4: The relation between hotels and the environment; the environmental effects and the ways to deal with them. Application of the EU’s system of environmental management in hotel units; the benefits of this application; an example of the application of this system in a group of hotels. 9 Chapter 5: Application of the environmental management in hotels in compliance with ISO 14001. Finally, the annex contains all the national laws regarding the protection of the environment, as well as the laws concerning tourism businesses. Information is also given on the ISO14000 standards.
