Ο ξενοδοχειακός τομέας αποτελεί έναν από τους ταχύτατα αναπτυσσόμενους οικονομικούς τομείς τόσο στην Ελλάδα όσο και στον υπόλοιπο κόσμο.
Στην παρούσα διπλωματική εργασία γίνεται η συσχέτιση της έννοιας του αειφόρου τουρισμού και της κυκλικής οικονομίας, εστιάζοντας στις ξενοδοχειακές μονάδες και ειδικά στη διαχείριση των υγρών και στερεών αποβλήτων που παράγονται σε ένα πλήρη κύκλο ζωής μιας ξενοδοχειακής μονάδας με εστίαση στα απόβλητα λειτουργίας που συνιστούν και το μεγαλύτερο ποσοστό.
Περιγράφονται οι μέθοδοι και πρακτικές για την ολοκληρωμένη περιβαλλοντική διαχείρισης των αποβλήτων ξενοδοχειακών μονάδων, διαμέσου του πλάνου διαχείρισης αποβλήτων,των επενδύσεων αγοράς εξοπλισμού, εγκατάστασης συστημάτων περιβαλλοντικής διαχείρισης και της ευαισθητοποιήσης και εκπαίδευσης των ενδιαφερομένων μερών.
Hotel sector is one of the fastest growing economic sectors both in Greece and in the rest of the world.
This diploma thesis initially relates to the concept of sustainable tourism and the circular economy, focusing on hotels and especially on the management of liquid and solid waste produced during a full life cycle of a hotel unit focusing on the operating waste that constitutes and the higher percentage.
Then it is described the methods and practices for integrated environmental waste management of hotel units, through waste management plan, equipment purchase investments, environmental management systems, awareness and training of stakeholders.
Subsequently, through the research process by sending questionnaires and conducting interviews to hotel units, the degree of respect for environmental practices and the circular economy is approached.
